Plates are called Sara or O-sara ("o "is a polite expression) in Japanese. Flat plates made with lacquerware are relatively new in our history. There were small plates from the past, but the larger flat plates reflect the influences from the Western culture. Those influences are creating a new style in the modern Japanese servings, which is very nice.
Historically in the formal settings of festive dishes, we served our dishes on a personal legged tray from a tatami floor. However, with the tables being the main place to have dishes, this tradition has conveyed to the flat trays or mats used personally. With the tradition to use lacquerware more as formal ware, lacquerware mats are also to be used to serve foods on them directly, such as sakizuke(先付け) in the Kaiseki dinner, which is assorted hors d'oeuvres in the course dinner.
